Holiday Ambrosia

2       13 1/2-ounce cans pineapple chunks
5       medium oranges
2       fully ripe bananas
2       cups white seedless grapes
1       3 1/2-ounce can sweetened flaked coconut
whole maraschino cherries
sparkling soda (optional)

Assemble ingredients and utensils. Drain pineapple, reserving liquid. Pare oranges with a sharp knife and remove sections by cutting close to the membrane; squeeze and reserve any remaining juice. Peel bananas; slice and place with orange juice in a glass bowl. Add pineapple, oranges, bananas, and grapes separately; sprinkle with half of coconut. Pour reserved pineapple juice over all. Chill. When you’re ready to serve, dot with remaining coconut and add maraschino cherries. Sparkling soda can be poured over all. Yield: 10 to 12 servings
