Company Meat Loaf

1 1/2 to 2   pounds ground beef
1/4    pound sausage
2       eggs
1       teaspoon salt
1       tablespoon Worcestershire sauce
1/2    teaspoon black pepper
pinch sage
dash garlic powder
1       cup bread crumbs
1       cup cheddar cheese, grated or cubed
1       carrot, grated
1/4    cup onion, minced
1/4    cup celery, chopped
1/4    cup sweet pepper, chopped
1       16-ounce can tomatoes, drained

Topping:

1/4 cup tomato ketchup
1/2 teaspoon dry mustard
3 tablespoons brown sugar
1/8 teaspoon allspice

Assemble all ingredients and utensils. Mix all loaf ingredients together. Form loaf and bake uncovered in a 425 degree oven for 45 to 60 minutes or until almost done. While loaf is baking, combine all topping ingredients and mix until sugar is dissolved. When loaf is almost done, remove from oven and prick top with fork. Pour on topping and bake for another 10 to 15 minutes until lightly brown. It’s best to let the loaf sit 5 to 10 minutes before slicing. Yield: 6-8 servings.
