Cloister Corn Muffins

1       cup butter
1/2     cup sugar
3       whole eggs
1/4     cup bacon bits
2       cups creamed corn
1       cup grated Cheddar cheese
1 1/4   cups bread flour
1 1/2   cups cornmeal
3       tablespoons baking powder
1 1/2   teaspoons salt
2       tablespoons milk

Assemble ingredients and utensils. Combine butter and sugar in a mixing bowl, cream until very soft. Add eggs slowly until incorporated. Add remaining ingredients, mix on slow speed until everything looks like a soft batter. Chill batter for up to 5 hours. Scoop into well greased muffin pans. Bake in a 450 degree oven for 15 to 20 minutes. Make sure that the surface is golden brown. Completely cool muffins and then release from pan. Yield: 24 medium muffins
