Chilled Broccoli Salad

8       slices bacon, crisp-fried and crumbled
1       bunch broccoli
1/2    cup each finely chopped red onion and celery
1/2    cup raisins
1/2 to 3/4    cup cashews or pecans
1       cup mayonnaise
1/4    cup sugar
3       tablespoons red wine vinegar

Assemble all ingredients and utensils. Chop the broccoli florets and tender stems. Combine the bacon with the broccoli, onion, celery, raisins, and cashews in a large bowl and mix well. Mix the mayonnaise, sugar, and vinegar in a small bowl. Add to the broccoli mixture and mix well. Chill, covered, for one hour or longer before serving. Garnish with additional bacon.


Yield: 6 to 8 servings
